I've had the game about a week. Tried it flat screen seemed fine. Today I got my chair set up HOTAS with X52 Pro and tried it with oculus. In the cockpit I'm sitting behind and to the left of the pilot (me).
I set up rift again and the same thing any ideas?

Take the rift remote, switch to the main menu and use the re-center viewpoint for this app (or something like that) menu item. There's also supposed to be a function key mapped to that, but that never worked for me.

The F12 key is the default but if you are running from Steam it clashes with the screenshot functionality.
You can remap it in the controls menu.

I have bound it directly at my hotas and use few times per session.

not because the rift drifts, my chair does....
Alternatively setup a voice attack command.

I too find I need to use the reset command quite often. If I take the rift off to do something, for example, it will generally need resetting when I put it back on

On PC here and the command is set to F12, but I use voice attack to trigger it.

That's cause ED triggers the reset every time it has lost tracking and regains it.
immediately when it regains it.

Which is normally a meter or so before you have it on your head
