Let's just say that this type of missile will explode near the target and form a cloud of really sticky paint. This will cause all wind screens to go dirty in an instant. This would happen also to eyes of the Thargoids.
You do not need to cause permanent damage in order to control. Paint in the eyes would work just like pepper spray against humans. If we want to look at them closer, we can temporally make them blind.

The thargoids are shooting us with these liquids and all sort of microbe materials, well why not reverse the situation and shoot them with non lethal super sticky paint. Well eventually it will wear off, if we do not want to kill that. We could use the blinded moment for closer studies.

Come to think of it, paintball multi-cannon rounds for practicing PvP with friends without the risk of blowing up anyone's ship during the practice would be neat. And a good way to practice things like FA-Off combat.

hmmmmmm. Practice rounds that can be made with synthesis? If there is some way for people to see how much damage would have been done if it was live ammunition, absolutely!

INDEED having paint weapons even for fun and practice is totally unseen before in any space game, however we already do that in real life while training soldiers for war. Just scale the paint guns up.
