PC shut down 6900xt on G9 Samsung at 5120 x 1440

Elite: Dangerous will load a GPU more than just about any other game and even many benchmarks/stress. Power or thermal issues are the first thing that come to mind if there is a shutdown while running the game.

Odyssey in particular--probably it's terrain generation--is also sensitive about system memory and GPU core clock stability.

A complete list of system specs and any relevant error logs might help.
 
A good computer doesnt't shut down with everything under 100% load

If you want to reduce the lifespan of your GPU and run your menus at 1000fps and waste power that is up to you.
AIUI his point was "if the computer turns itself off without being told to, it's broken", not that you should run it at max throttle for no reason.
A non-broken computer would, when it can't handle the load, throttle down or at most cause ED to die (oom, driver reset).

That the hardware (or maybe driver) issue gets triggered only by ED, not other bench/stress tools, tells us nothing except that there's so many different parts in today's hardware that it's impossible to write a test tool that stresses them all properly.
