what is unclear to me: when I start a new game do my infantry units already have hand grenades or not?
Or do I have to research them first?

Your infantry do have hand grenades before any research yes. However the hand grenades of a regular infantry company can ONLY be used against "structures" This means machineguns, observation balloons (in the air and on the ground), artillery light and heavy. They will NOT use these grenades on any infantry units in trenches or in the open.
If you want to attack an infantry unit hiding in a trench you must use trench raiders, grenadiers, Gurkhas, flamethrower troops, or any other "non rifle armed infantry" these grenade infantrymen will also throw grenades at structures same as normal riflemen.
