Reminded why I hate this game.

So I'm looking in uninhabited systems for impact sites to find manufacturing instructions in my DBX built for distance exploration not fighting. I land on a few sites that are distress, impact, irregular, etc...and I find nothing but a few measly canisters at each site. I pick them up shrugging my shoulders thinking eh might at well get them while I'm here, meanwhile I think of posting why the heck won't FDev give us to better loot at crash sites...you know stuff that's actually worth our exploration time. I head back to orbit from my third explored body, and probably have cargo of some personal weapons, narcotics, and a few other assundry mundane items. I hit super cruise to go the next body, and then go to get a cup of coffee, talk to my wife for minute and then come back....TO FIND A NPC ATTACKING MY SHIP....I'VE BEEN INTERDICTED WHILE AFK, MY SHIELDS ARE GONE AND SHIP IS AT 10%. SO WHAT DO I GET FOR MY REWARD...A 650K REBUY BILL. THAT'S WHAT I CALL REWARDING GAME PLAY.

Entertaining story OP thank you for sharing :)

Some ships have a coffee machine in the cockpit, some don't. I just checked & my new Cobra MkV doesn't either so like you I'd be best to log out of the game to go AFK with cargo on board, or if you prefer to roleplay AFK as I do, fit some beefy shields to delay the incoming damage somewhat.

if you’re going to go afk, aim your ship for deep space and hit full throttle. NPCs will never be able to catch up to interdict you.

Ah. See I used to offer this advice but NPCs can interdict you at full throttle & have been able to for a few years now, they just normally don't.

I had one (probably a mission spawned pirate tbh) come from in front, turn & interdict me while on a long supercruise to a distant secondary star. I wasn't AFK, I watched it happen & was quite surprised they got a tether on. Needless to say I was fine & the NPC didn't last long but still, the only place you're 100% safe is docked or logged out although beyond a few hundred (probably a few dozen now) ly from populated space there is nothing. No cargo to find, no POIs at all apart from the Thargoid sensor fragment ones. If a Cmdr normally leads the hermit life out in the black it can be easy to become complacent.

There are heaps of games where NPCs will turnup and attack you if you decide to have long convos with the missus.

That's your problem. He said deep space. NPCs can only interdict you when the time interval between you and them is in a certain range. There's a short window when you're accelerating and a longer window when you slow down. If you're headed to another body you will slow down.

Turn your sound up next time ;)

I once did a murder stint at something like 4am and had the sound off - somehow I missed the ATR warning....I was in a nearly unengineered Clipper and almost made a biowaste- so your advice is very apt.

It wasn't a problem & it was during the acceleration phase (and I had been on that path for 5+minutes of a ~20 min trip), I wasn't pointing at the distant target, just headed straight out from the entry star.

I no longer give that advice :)

The other mistake was of course loading cargo onto the ship, if the ship was empty it might still have been interdicted but an NPC would be unlikely to do more than complain.

That is, in my experience, only 99% reliable or so. Sometimes, an NPC will show up to be interesting for you.
I’ll take that 1% risk over having to break immersion and the flow of the game. Besides, I always keep an ear out, and I like to listen to the hum of the engines while I prepare a beverage or take a waz.
