Has happened to me before Jay. Try rebooting the game and launcher, but if they don't reappear on docking, contact support and they should put it right PDQ. Plus sell the stolen stuff if you can at a BM, or just eject it you're away from dock.

I know its so easy to have 100% server uptime and stability.
Compared to Red Dead Redemptions 2s Online experience... not the solo, Elite is TOTALLY STABLE
RDR2 online was a nightmare of lag spikes, camps disappearing, hackers teleporting everyone to some odd spot and killing everyone on the server, or changing into wild animals and killing you.
No... Elite is very quiet to be honest

It's not about 100% but it's followed more or less the exact same pattern since 2015
