I think you don't have to worry. Fuel rats saved skins of commanders tens of thousands lightyears from the inhabited space.
It reminds me of my first three minutes long "exploration trip". It was just an impulse decision that I'll go out there. Considering that I also had no fuel scoop and more importantly, was sitting and an Eagle, my adventure ended after three jumps...
First things first: Are you sure there is no system with scoopable sun nearby if you switch back to eco route?
