As a dedicated space tourist (AKA explorer, mostly aimless) I'm having a ball just flying around the galaxy visiting real stars. But the planets and stars all seem to be perfect spheres, which are a bit dull.
I visited Algol last night (magnificent, well worth a trip), an exceptionally close multiple star system. The red giant Algol B should be pulled right of shape as millions of tons of star matter are sucked from it into Algol A. To watch the matter spiralling off into Algol A would be spectacular
Also fast spinning stars and gas giants should be flattened like oranges - go look at Jupiter.
