If it's the same with Planet Coaster and have a custom scenario editor, that would be super awesome. Yet as we don't know, there can be some challenges we can have here.
1) Rebuilding the horrible zoo
Burkitsvile Zoo in ZT all over again. Being an intermidiate scenario, with a very tight budget and horribly designed exhibits, this would be a good challenge and recreate the improvement from outdated menagerie to modern zoological park.
2) Reproducing endangered animal species
Giant Panda will be the best, yet any endangered animal would do the job(ZT2 had each campaign for Giant panda and Baird's tapir). make them happy, hope they get a child while you successfully manage the whole park.
3) Rescue center park.
Animal comes in injured or sick condition, possibly by an accident, disaster, or abuse. We bring them to the park, cure them, and rehabilitate them. Having an option of disablity to adopt new animal would add up a little difficulty.
