This is actually a sign that we're living in a simulation. There's a bug in the code that means whatever name the pub NPC gives you it's always stored as 'Dave'. Same reason that the 'speak to the manager' NPCs are always stored as 'Karen'.

That makes sense... Shame there isn't a bug in the code when they give me back my change for the pint I just bought though, isn't it? (Or maybe there is one, hence the distinct feeling that I've been conned)

It's a kind of standard response in Poland, when you ask someone
"how is it going?"
you will probably hear
"chujowo ale stabilinie".
As an answer.
The (non literal) translation would be
"(feces/censored), but stable".
But the ACTUAL meaning would be
"It's OK".

It kind of shows how low our expectations from reality are.
