Kale, apple and cheddar flapjacks

Anna Thomson recently ordered 10kg of oats instead of her standard 3kg. Since then, she has been experimenting with flapjacks like never before. This savoury batch is excellent. Apple and strong, salty cheese are two things the lacy leaves will always work with.

Makes 16-20
2 handfuls of kale
½ tsp salt
40ml olive oil, plus 1 tbsp for the marinade
3 garlic cloves, minced
1 tbsp honey
1 small onion, diced
225g oats
1 dessert apple, diced
1 carrot, grated
150g strong cheddar, grated
2 eggs
20g chopped walnuts (optional)

1 Tear the kale off the stems and chop. Put in a bowl with ½ tsp salt, 1 tbsp oil, 1 minced garlic clove and the honey. Massage the kale with the marinade and leave for 15 minutes to wilt.

2 Preheat the oven to 180C/350F/gas mark 4. Heat the remaining oil in a pan. Gently fry the onion for 5 minutes, or until soft. Turn off the heat, add the marinated kale and all the remaining ingredients, reserving 50g of cheese, and mix well. Season to taste.

3 Press into a prepared baking tin, sprinkle with the remaining cheese and bake for 20-30 minutes, or until golden.

I would change step 2 to "preheat oven to 1700C. Incinerate and replace with actual flapjacks".

Since we're at it and it's super hot in so many places:

Ice Cream (no ice cream machine needed)

400ml cream (best use the stuff bakers use. "Konditor Schlagsahne" in German)
300ml condensed milk (the one with tons of sugar in it)
Tasty stuff

1. Whisk cream until stiff
2. Add sugared condensed milk
3. Add flavour (liquified fruit, fruit juice (cook with vanilla pudding powder before adding, it's awesome), green tea (matcha works great), vanilla, fish...)
4. Mix, pour into shallow bowls and freeze (shallow because it is supposed to freeze evenly)

Then wait and enjoy!
