I had the same issue with Endless Space 2, after 20 hours or so I feel no incentive to play it anymore. The unbalanced space battles did it for me mainly, but at the end I realized I like it more when the strategy is more 'down-to-Earth', i.e. once Civ6 with all expansions will be on sale, I'll scoop it up.
So a new DLC is on it's way, I got some of the DLC's and made a new game, this time it going pretty well, until a fraction said I could be "protected".
Didn't really wanted to be protected, but hey they just launched a 24.k strong army and obliterated all my systems, so need to go back to a save where I can say, sure I would like some protection and see where that leads.

I, too, really wanted to love Stellaris. For everything the game does brilliantly there is something that it does terrible. Couple that with the very generic and forgettable races and you are left with a very 'meh' game. It's still fun in the early game when you're basically playing out a Star Trek episode where new discoveries and stories are coming all the time. Then you hit mid-game and the entire thing just falls flat.
So I rolled my game back and tried to accept “protection however I could not roll back to where they offered me that. So I quickly asked to be their vassal and they accepted. Actually that was not so bad as they left me alone to do whatever.
A game I'm currently playing I ended up having to become a vassal of a fallen (but now woken) empire, as there was no way I could have won a war with them.
I'm slowly getting to the level where I'll soon be able to hopefully break free (and destroy them, as I hold grudges). In a way it has helped as I've been able to ignore most other empires and just concentrate on building up my empire (now have both a fully populated ring world and a dyson sphere). It's a bit painful seeing how much energy and minerals I'm transferring to them every month though...

Yeah my "overlord" is constantly asking for minerals, troops and whatever they can think of so I'm also in a rush to get powerful enough to break free, however I don't have a 35K fleet I can sip around with like they do, and therefor I need something else.
I'm heavily invested in bio research and my first alteration of a clode army is almost ready. I'm also building a cyborg army but so far they
are just too stupid to do anything.
I'm going to build tall instead of building wide, but that also takes time.
I rather build wide while I can to expand my borders and when I'm surrounded I make some friends to keep the neighbours in check and begin the economical and technological renaissance of my empire. On a side note, I generally don't worry about troops as those can be overwhelmed by numbers but I believe navies are another story.
well problem is that I'm totally locked in by surrounding empires so tail is the only option for me right now.
