Would be nice to see, I have actually suggested this before as a way for us to eventually travel to other galaxies (or galactic fragments/dwarf galaxes, even if there was a Milky Way - Andromeda stream I don't think people would be willing to travel that far).
You seriously underestimate the Elite playerbase
And their 70ly Anacondas
The 2.5mil Ly to Andromeda in a 65Ly ship will be 38,462 jumps. Lets round up to 39,000 for non-perfect jumps. At a jump a minute which covers route plotting time and non-perfect jumping that'd be ~650hrs flight-time. Lets say you get in 2 hours a week day and 5 hours Saturday + 5 hours Sunday that's a total of 20hrs per week. Fairly heavy playtime but something I could manage most weeks if I dedicated myself to it. The harder bit would be not stopping to explore anything really but you'd have it done in 8 months at that rate... If you are exploring for the profits double it or triple it to 1.5-2.5 years of flight.
Still, I know some explorers who have been out exploring since the game released only stopping back for new SRVs. I'd say I could definitely get there within a year provided I had enough films and series to have on my 2nd monitor
I also expect if there was a "race" for the first one to explore Andromeda there would be some crazy times. There has to be a group of students or retired people or whatever who could do double/triple shift the same account and have it flying 20 hours a day or something silly like that and get there within a month...
On topic:
To be honest it'd be nice but given the huge galaxy at present i'd prefer more detail be added to whats there already than adding more. The Devs have stated a few times that they could easily expand the Elite world to any number of galaxies and stuff but its not something they want to do just yet as we've got more than enough of the current galaxy to explore..
