VKB STECS throttle or Omni-Throttle

but so will the omni-stick eventually.
It will. I use the OT with laterals on X, vertical on Y and thrust on twist, and I pretty much fly FA On all the time. The left hand movements for tightening the turn circle, doing stall turns or all that stuff comes second nature after a while.

Before the OT I used the throttle of my X52 alongside my VKB stick, and I had the laterals and verticals on the digital mini POV on the back of it and controlled thrust with the thumb wheel. The larger distances you have to cover with the OT need getting used to, but it also means you have much better control than with either a digital POV or an analog mini stick.

And that's not just for combat. I tend to fly much more nimble when core mining, flying around the rocks and inspecting them and all that, and the overall control I have with the OT feels great. I'm a very lazy and static combat pilot in comparison :) .
