I usually make my carbonara with peas and shrimp.
This past week I had a bunch of extra broccolini, so I made it with chicken and broccolini... and I made it with an Asiago, Parmesan, Pecorino cheese blend... and cream. I threw the whites away - I literally scowled at them as thy slid down the sink drain.
As I ate my dinner, I proclaimed "Mama mia, thatsa gooda carbonara!" all while making the fongool hand gesture.
I love Italian food.

Well this is just 1000% wrong. What alfredo has eggs in it?

This being said, at home we don't use cream in Carbonara, but some of of our friends does so..
real question here: how much freshly grinded black pepper do you put in your Carbonara?
