Who want it back on Xbox?

I'm not sure what not being able to get the Cobra Engine to work well on consoles has to do with titles that don't use the Cobra engine. Now, if all those games used the Cobra engine, that'd be an interesting development. The Cobra engine barely works on PCs. ;)
I'm countering the misinformation that consoles are just toys that can only run Pac Man and Asteroids, but no "deep" games. The fact that XBox can run a realistic flight simulator with a 1-to-1 model of the entire earth (which I'll argue is much harder than procgenning a dozen planet types over and over), along with simulating weather, real-time traffic, etc, disproves the "consoles are toys" FUD. Not that consoles don't have their issues, they do! But as you yourself say, the reason Odyssey didn't make it to modern consoles rests on the inadequacy of the Cobra engine, not the the console itself.

Heck, I have the XBox as a backup plan for Starfield in case my PC can't run it!

Anyway, for right now I'm a PC gamer who uninstalled Elite, so I probably should bow out and let the "Elite on XBox" fans defend themselves. I just hate the lame claim that "consoles are toys", it ruffles my feathers.

ps - Cobra engine ran wonderfully on PS4 Slim back when Elite first released on Playstation, so I'm not sure even the Cobra engine (at least not the fundamental implementation of it back during ED 2.3) is solely to blame..
 
Horizons ran at 75+ fps on my original specs with a GTX 970. If I hadn't upgraded my GPU I wouldn't get more than 8 FPS today. The game got more resource intensive and old hardware got left behind, even the "new" consoles. Frontier thought they could make it work at some stage. They were wrong, it happens. 🤷‍♂️

Again, there's this implication that all other games running on console are somehow "less" than Odyssey, which, by the way people talk about it, ought to look photorealistic like the latest Dune movie. The thing is, it doesn't. Both MSFS and Starfield look way better than Odyssey IMO (as do a lot of older games on my PS4 like RDR2), and they both run fine in XBox.

And then there's that guy who says he has a 200 year old computer and Odyssey runs fine for him...

I don't tend to even attempt to defend the console platform, my experience from reading some of the comments on this forum, indicate that trying to talk to someone with such entrenched views is analogous to the chess playing pigeon 😀.
I regard us as all gamers who happen to have come together because of this wonderfully niche game and play on different hardware.
My preferred platform is xbox due to its immediacy, of course the con to that pro is the dearth of "deep" games such as ED.
My work life has me working on kit that requires a laptop with VMware from DOS through every iteration of windows to operate and fault find. The last thing I want is to do the same when I want to relax. Thus xbox.

My rig is waaay overdue to be replaced, it's 11 years old. I wouldn't say it runs fine but it runs well enough for me to make E1 rank in Mercenary. And again, it's not about other games. It's about whether or not they can make Cobra run on consoles and given it struggles on high-end PCs it's not a surprise they couldn't make it work (economically or technically) on that platform.
