Perhaps with 3.0, they could do a preliminary spacelegs "appetizer" inside the ship. Similar to what the Flight Simulator series does. Effectively a "free camera" to see inside the ship in all the corridors and cargo area, and "black out - signal lost" when reaching the hull edges. Like someone who posted above, a "blackout" transition to the free interior moving camera.
Similarly, with 3.0, they could do a few very simple atmospheric planets. Like basic grass bushes in a desert, volcanic planet with primoridal soup "puddles". A "tatooine" like planet with the most basic atmosphere. Introduce sand effects for the SRV. Simple gameplay could be mining/shooting outcrops for diamonds/rubies/gold nuggets etc. Or setting up moisture vaporators for future Toshi-like stations.
"junior devs"? hardly, the slider features and modeling with holo-me avatar/character design I thought was on par with Skyrim or better.
