Why the unspecified pause after beta?

Been explained, but.. the pause between the end of the beta and the go-live is for 11th hour bug fixes, updates, enabling content that was left out of the beta, and resetting values so that you can't do all your engineering in live for 1 Iron.

Yes, but I think in the past, when the beta has finished we've been given a target week for the actual release. On the last livestream my bene gesserit trained instincts rattled when Ed answered Sandro, saying its not been announced. "He's hiding something." I thought.

On the other hand, it may have been the radishes I had earlier.

Considering the Thargoids are due to get to the bubble in about two weeks... I will be willing to bet the patch will drop then.

If you're adding a specific thing, such as Thargoids or Megaships or whatever, it's probably fairly easy to beta-test.
You add the thing, see if anybody can find a way to screw it up, and if they can't you're set for release.

With something like 3.0, though, it's all a bit more vague.
There's quite a bit of specific stuff but there's a lot of "framework" stuff too.
With the latter, it's not just about testing to see if it works, superficially, as intended.
You have to (if you're doing a proper job, at least) look at all the data for all the people who were involved with that stuff and verify that it had the intended effect on them.
Do murder-hobos get a sufficient slap for their actions?
Do generally lawful players get unduly penalised for one careless action?
Have people found ways to profit from the new mechanic by operating as a group?
Are there any circumstances where the new mechanics leave people in an untenable position?

There's probably a whole heap of stuff they need to review before making a decision on whether or not to move forward with 3.0 in it's current configuration.

No negativity attached, I just thought its unusual for FD to run a beta test, stop it, and still not give some sort of date for it to be rolled out to the live game.

Maybe there are some unannouced extra features to be included that are taking longer than expected, maybe there are just some issues that will need fixing. Not being negative, just thought it a bit out of the standard FD operating procedure.

Any theories?

Release date means deadline means rush. Rush is bad.

The delay could also be used to implement Mysterious Things(TM) in the game, which isn't something that FDev want people to find out about in the beta. :)

Better start stocking up on Exquisite Focus Crystals...

I did that anyway. I emptied my caches of grade 1 and 2 mats for EFCs, BCs, MEF, Antimony and Tellurium. When 3.0 hits (the sooner the better) I plan on exchanging some of my g5 hoard for g1-g4 mats.
