Wich Star types to exclude?

As others have said, don't deselect anything if you want to live in hope of finding that rare or unusual object and use Eco plotting.

If seeking ELW, select A and F.
If seeking ELW and plotting long range, A, F and NS
If you want to maximise ELW, A and F using Eco.

I know that some fellow Cmdrs will say that Eco versus fast plotting makes no difference in probability of finding ELW in A & F but my experience is that you're much more likely to find an ELW in Eco. If I weren't so lazy, I'd analyse EDDiscovery logs to test the theory..

Oh, and as Cmdr Orvidius notes, filter visited if exploring a defined area (e.g. inside a nebula) to save repeating visits...

Dunno if anyone's done any rigorous analysis or if it's just a gut feeling but Chiggy's always maintained that ELW distribution is a bit clumpy and subsectors have none or many, so eco plotting within an area that has lots would likely find you more than an equivalent number of longer jumps across a wider area but eco-plotting around an ELW free sector won't be as good.

Eco slow troll A and F systems...whenever you hit several in a row ...strip mine all local D mass. In the core with D mass cubes (anywhere from 8K to 14K systems) I can slow troll 500 systems in a single D cube and just about predict the total number of ELWs with just a 5% sample...had a high of 1 in 42 and the worst was one in 74 (about average)
Core hunting kinda took a shot in the foot with the import star function disabled though.
