I am one of the people that preordered X-Rebirth... It was pretty horrible and bug ridden at the start, there was many things broken and the devs went with a few ideas which didn't sit well with the community. It was visible that in the 7 years of its development there was a decision to port it to consoles, and then that decision was retracted, but the "casual" elements remained. Like the "follow the slipstream of other ship in superhighway". However around 6 months after release, with I think The Teladi Outpost DLC things got better. I didn't play it much, mostly due to other games and the whole internet discouraging it. I wasn't a die hard fan of the X-series though, so I wasn't that put off by it. One ship only is a bit limiting, however you can upgrade it. I myself didn't experience many problems with this game and heard that now it is quite good. I even bought the home of light dlc on sale lately.
The space legs gameplay was really atrocious at start. Tedious, annoying and with fugly NPCs, stations were the same layouts over and over and the inability to use menus to interact with station and being FORCED to walk and search for the appropriate NPCs (captains, merchants, engineers etc.) was annoying as hell. It was soon rectified by mods, and then by original game if I am not mistaken. I also am waiting for the VR edition, very much looking forward to see X:R from that perspective. It should be amazing with its busy trafic and fleshed out stations and locations, provided they get it right.
Regarding the use of HOTAS for pretty much any X-Series game, the mouse + keyboard was always the winner. There were problems supporting multiple controllers (like my ED setup consisting of HOTAS and driving wheel + pedals), but wider joystick support has rolled in quite fast after launch IF I am not mistaken (can't remember, really).
