As you are travelling in SC, albeit at the lowest speed, you can only be jumped by being interdicted. I believe if you get that close to a star and then face away from it whenever a ship tries to get behind you to interdict you, they will drop out of SC and therefore interdiction will fail.

I know that some players tend to fly at close to 100% heat due to trying to get most out of their power plant, but this is dangerous when scooping. You'll have to be a lot more careful and makes exploring dangerous (and Danger should come from external threats, not your own setup). I like to keep my ship base temperature below 50%. This has helped me escape from hot situations without damage, whereas if i'd been running a hotter ship i might have taken some. Also, if you are wanting to do stealth, then you really want your base heat as low as possible.
In other words, don't skimp on your power plant, its more important than you think.
Also, something else i've noted. When scooping, if you get to around 99% heat, with the right setup, you are getting max safe scooping. If you go above that, like 101, 102, and reduce thrust, it will generally drop down to 98/99%, and you are still ok. But push it a bit further, and you are in the range where your ship is absorbing more heat than it can dissipate. Then your heat will keep going up and up. This is a dangerous position to be in, because at some point, you need to engage thrusters to get away from the star (unless you are willing to cruise away at 30 while still heating up).
In other words, best to play it safe. Having to wait a bit longer to get fuel is better than blowing you ship up.
