Just to add my 2cents to the debate, in my experience interdictons are not impossible to escape, but I have yet to work out what affects your chances of success, i.e. ship size or type / speed etc. and I have no idea if the glitching where the vector jumps is intentional or not as part of the mechanic.
What I do depends on the ship I am flying and what I am doing, if I am well armed I might just drop and blast them, if I am smuggling then I will try to evade. When trying to evade usually it doesn't take me long to work out if I am going to (or can indeed) win the interdiction, so l have a go and if it looks like I won't I drop speed and submit and then prepare for the consequences!
It would be interesting to know more from FD on whether it is working as intended and also the exact mechanics so we have a chance of assessing our chances before the interdiction starts.
