I kinda stole this from Isinona's recent video (found here https://www.youtube.com/watch?v=sSQgGzo2S6Q), but it's basically exactly what I had pre-2.1, except my version totally wrecked NPC faces come 2.1.

And turn your ingame HUD brightness ALL the way down.
It comes out as a quite pleasant greyscale that preserves blue shields/green friendlies, enemies are a dark grey & neutrals are a brighter gray (it's a substantial difference, despite my description). Station UI is a comfortable dark green background with bright lettering & graphics.
Alternatively to turning HUD brightness down (or in addition to it if you still find it too bright), what I have found works, is to adjust the first row of "1s" down to the same number like 0.8, e.g.:

I haven't tried turning it down further (as opposed to the ingame HUD brightness), cause I figure it might start screwing up the NPC faces again if I do and that was the primary version I sought out Isinona's HUD colors.
