It was purple because Samuel L Jackson told George Lucas he wanted a purple lightsaber because it's his favourite colour
That is the actual reason it's purple.
He never asked for a purple Lightsaber, he wanted to make sure he could easily recognise himself amongst all the doings that would be going on, and he is a gangsta pimp and wanted to be different. Plus the aforementioned stuff about how he obtained the crystal would have been written into the Star Wars legacy. None of which is any good now as the Disney folk have decided that anything else apart from the first 6 films are not Canon.
