It's because there are people ....a subset of players... who would cry so tremendously about not being able to play without risk of death that Fdev has made this combat opt-in.
Not sure what kind of dirty laundry they have against the powers that be, but it seems their opinions hold some pretty strong influence in the direction the game takes.
Could be they don't have the capability to do so. We know they can travel through witch space and enter normal space but they probably don't make use of the alcubierre type drive that we use to travel in supercruise. It is a shame that they are such an optional threat, but maybe that will change in time.

It’d be a pretty harsh game if, at any point, you could be randomly interdicted by an enemy against which you have literally no defence. Or offense ... the Thargoids right now are, frankly, irrelevant for 90%+ of players since we can’t take on even a basic scout ship variant without a wing and specialist weapons locked behind seriously specific grind. Simply throwing a Thargoid in front of players with a “tough - we know you can’t even dent it, here’s a rebuy” would be ridiculous. Might as well have a “your FSD will randomly spit you into a sun” feature while you’re at it.
My thoughts exactly.
What, you mean like in all earlier versions of the game?
I don't think they use Super cruise as they seem to be able to work hole in accurately to where they want to ve
Open mind =/= obeying every stupid demand for the sake of being a good little obedient slaveOr maybe the-powers-that-be agree with their opinions.
The mind is like a parachute. It only works when it's open.

about FTL travel in elite. Sorry but no.
The FSD in elite isn't based on any hard sci fi.
Supercruise is the same FSD drive tech as full on high jumping into witchspace/hyperspace. It's just at a lower power level. Dont confuse how it's depicted visually in the game to correspond to the lore because it doesn't.
There was an older version of the drive that was much closer to the Alcubierre drive that existed between the first generation fsd's and the current ones that was in use due to the loss of the technology blueprints of the first gen tech. but this FTL technology is not used in any ships in-game. Even cap-ships dont use them, their visual behavior in the game is due to their size - using the same FSD tech as all the normal ships.
So in the game, you just have a representation of the same tech at different power scales resulting in slightly different behavior, from low velocity movement within a system to near instant travel to other systems to ripping a hole in space-time and insta jumping from one point to another.
Most of this is even in the game as early galnet articles revolving around FTL travel.
Now what the thargoids use could be something totally different with a different method of traversing hyperspace and different capabilities power-wise. But the fact remains, it's been part of the lore since day one that thargoids interdict between systems. I dont think it's ever been part of it that they interdict during supercruise type travel, but that's because we haven't interacted with them in lore since supercruise travel was invented (it's new).
