Unless you are right on the edges of the galaxy, or you are in the Brown Dwarf layer, there will be no shortage of scoopable stars for you out there

It is possible to filter the galmap to show only sccopable stars as well, which will guarantee you aren't going to jump on fumes into a system that isn't scoopable. Just in case you didn't already know, the scoopable star-types are OBAFGKM only. The only thing is that there can be some interesting sites and objects in non-scoopable systems, so I find it best to just watch where I am going rather than filter everything out, but the option is a useful one.
If you do ever find yourself out of fuel or severely damaged out in the black, you can always call on the Fuel Rats rescue service as well - they go to incredible lengths and places to rescue commanders that have gotten themselves stuck.

Even if you are in the Brown Dwarf layer (which I've never been into, by the way!), it isn't very "deep", so a couple of jumps in the Z axis will get you out of it.
