You can do medium security base runs. I use Ejeta Relay in Delta Pavonis. It's certainly not the most time-efficient, but it's something different.
 
For Datamined Wake Exceptions, I got a wake scanner to my combat ship, and go win some conflict zones.
When you win, all the enemies will jump out. And any you killed you can also harvest!
 
I have an iCourier set up for that. Good shields, fast and agile for going around the installation. I use a size 3 recon limpet controller as they're faster to hack the node. You need to scan the hackable system, then select the sub system before sending off the limpet. Once the hack is done, you get a small bounty and system security will be alerted, which only is a problem in high security as they turn up almost immediately. Lower security offers you enough time to hack most if not all the ports on the installation. Yields a random scattering of encoded materials. Oh, and installation guns will fire on you but they are not as powerful as, say on a megaship. You can use the installation itself to hide behind so rarely more than one turret will fire at you. It's definitely more interesting than a re-log fest.
I've gotten bounties in anarchy systems doing this which is a head scratcher. Where do the authorities come from in a system without authorities?
 
scanning piles of ships only gives maybe 3 pieces of data per 20 ships scanned...

That sounds a very low rate. I'll get a hit for at least every five ships scanned, sometimes several in a row. Also, if you make it a habit to scan ships while you go about your other tasks, you'll find that you've got a nice selection when you need them. Busy space stations in high population systems work well to collect them in bulk. As do civilian kill missions (at least, they do for me as I can only ever get one or two ships before the rest of the convoy high wakes anyway!). Civilian kill missions also turn up other useful materials.

On that note, it's worth thinking about what wake-scanner to use, especially if you're using it in hazardous situations.

Given that G4 upgrades are pretty easy to do, I find that a 0c wake-scanner with a G4 range upgrade gives me the best "bang for my buck".
A 0d scanner can be almost good but it doesn't save a lot of power over the 0c and it'll require you find those pesky G5 mat's to craft.

Also, kind of redundant at the moment but the ships at Famine Distro' sites used to be a maximum of 10-11 km apart so a 0c scanner with a G4 range upgrade was perfect 'cos it meant you could park somewhere in the middle and scan everything without moving.

I use fast scan to whatever grade I can afford and boost around like a nutter. It's more fun. :p
