The only thing i've ever had to do in elite was sandbox experimentation. Ie, come up with an idea, wonder if the result will be fun, give it a go. A ship not tried before, a sandbox activity, something in the mission boards, new weapon types, new flying styles. Basically a constant stream of "sandbox missions". When its time to do something else, you fill the gaps naturally between these.
Also if you were serious about eating "grinding" as something normal you do every day... maybe try other games who make an effort into it.. their grinding systems are endless, designed to actually make you feel good about doing it, and probably monetized as well. Connecting the idea of grinding will elite will kill you. You don't even get a popup box when your grinding is finished. It doesn't even tell you when you've finished. No achievement nothing. So you've technically wasted all your time.
If the sandbox dries up then its time to move on.. until you can invent something else to do.
Also i came up with one on the weekend.. turret weapons on smaller ships (ie, python and krait). Having a blast and refactored the fleet.
