Would absolutely love all of those. Especially the Alligator Snapping Turtle and the Victoria Crowned Pigeon.For me most of the unpopular habitat species that I'd like to see in Planet Zoo are on the smaller side, as this is a category of animal that the game is severely lacking in (we need the small-space "filler" animals, real world zoos don't have a large "star of the show" species in every habitat). With this being said, I tried to narrow my choices down to just 5 species.
1. Alligator Snapping Turtle: Although it's probably the most iconic freshwater turtle species, I haven't seen a ton of requests for it from the community. Currently, PZ is really lacking in habitat-based reptiles and I think this species would be a perfect option. Plus it would take advantage of the new diving mechanics that were recently implemented. The few times that I have seen this species mentioned, people have suggested that it would be an exhibit box species but I personally don't see the practicality in that. It's one of the largest freshwater turtle species on the planet, and has been known to reach sizes of over 200 lbs. Additionally, outside of crocodilians and monitors, large turtles are the only other semi-aquatic reptiles that would be large enough to function properly as habitat-based species. (Plus, if the highly-requested American Alligator is ever added how cool would it be to create mixed habitats between these two species!)

2. Fossa: I've seen this species mentioned some, but not nearly as much as I think it deserves. It's a small carnivore (again something the game is currently lacking greatly) and is a true oddity amongst the animal kingdom. It possesses a mixture of features found in various Carnivora families, such as the Felids and Viverrids, but actually has been found to be most closely related to mongooses. Not only is it a really unique looking animal, but it'd also pair perfectly with the lemur species we already have in the game and it would better tie together the Madagascar sections of our zoos.

3. Victoria Crowned Pigeon: Currently we only have five avian species within the entire roster of PZ, making birds some of the most under-represented animals and the Victoria Crowned Pigeon would be the perfect candidate to up their count. Not only does it fit the current ground-based limitations (which will hopefully change in the near future) but it is also unique in its physical features and taxonomy. It is a member of Columbidae, a family strictly consisting of doves and pigeons. Additionally, the Victoria Crowned Pigeon happens to be the largest Pigeon species in the world.

4. Lesser Mouse-Deer: Although its in their name, Mouse Deer are not actually members of the deer family. Instead they exist within their own family, Tragulidae, and are unique amongst ungulates. In fact, the Lesser Mouse-Deer is actually the smallest hoofed mammal in the world. These guys would be really interesting additions to PZ and would allow for greater creativity and possibilities in habitat builds. They also would up the Asian ungulate count, which is only comprised of the Bactrian camel at the moment.

5. Black-tailed Prairie Dog: I've seen a lot of requests for the Meerkat, which I too see as needed as it is a staple amongst the zoo community, but another species that I see as being equally iconic and falling into a similar category is the Prairie Dog. Like the Meerkat, the Prairie Dog is a highly social and group-oriented species that is known for its burrowing capabilities. Unlike the Meerkat though, the Prairie Dog is a member of the rodent order (one of the largest groups of mammals yet total unrepresented in the game) and is a herbivore endemic to the North American plains. Like the Meerkat, these guys would allow for habitat designs that are not possible with the current PZ animal roster and would greatly diversify mammal representation. Additionally they would look amazing in an open grassland habitat alongside the North American Bison and Pronghorn.

So I'm not pessimistic that any animal is no go for future.
Now back on the topic. The animal I think is pretty unpopular here, I don't think it made it to that list at all is :

The big, turkey like bird that inhabits boreal forests and taigas of Europe. Especially prevalent in Scotland and Scandinavia. Also perhaps more known as wood grouse.
Its really an unique, big, beautiful bird with interesting behavior, where for the most of the year it's extremely elusive and rare, but during mating season does a 180 and goes out of its way to attack anything in sight, even humans. Its also has this interesting, dinosaur like sound.
Best of all, even if it's flying bird it doesn't need to for game purposes. It can use peafowl rig. It even does the tail spread thing.
Also it would boost bird and European representation in game

Yes capercaillie would be such a good addition. Really impressive birds. And as you said would boost the bird representation aswell as European animals. That is why I have it in my proposed Europe pack.
Out of curiosity I checked and it seems the capercaillie is ranked at 141 with only 3 requests on the meta list.
