Is it possible to enjoy Odyssey without being a Murder/Thief?

Me too. It's quite one-sided toward the old pew-pew right now. That's just what they've given us at this point. It would be nice if they broadened out a bit, for sure.
There's a lot of potential. Journalism work (all you'd need do is 'scan' an NPC / vista / structure / biological feature); search and rescue, either in ground locations or at attacked stations, unblocking doors with the arc cutter; espionage, again where you can scan a location or whatever... These would surely be easy to implement.
I just pretend they're sleeping.

A certain Fix It DJ had the same philosophy.

yeah, that's a big difference. In Horizons you can be a criminal, but the payout generally isn't worth the heat and the risk. Pirating low temp diamonds (the most expensive thing you can pirate) is less reliable than simply mining them and you don't have to deal with moving hot goods around.

In Odyssey, criminal activities are actually worth doing - if you can get away with it.
More like, in Odyssey, criminal activities are casualized. There are not much distinction. You get fined by doing legit mission. You get to fight civilian because the alternative to get some engineering component is not there. Eventually, you don't know if it's legal or not anymore. I just shoot stuff, it's all the same.
It's a very gamey approach to "casual murder".

I'm killing civilians in their room to steal their cat meme. You can't make that up. It's literally one of the gameplay loop. It's borderlands level of silly, I can't care.

Also, don't really have a choice if you want to do the engineers.

The thing is, I really enjoy stealth-type gameplay, heists and whatnot, in other games. I'm not at all against doing illegal things in a game, it can be quite fun.

But in ED up till now, there was no stealth gameplay.

In Odyssey, I can take a mission to steal an item from an active base. I have to do it without raising an alarm. So I have to be sneaky, locate the item without arousing suspicion, slip in while no one is looking (having already managed to get the necessary access level from an NPC without getting caught), grab the item, and then get away without being seen.

It's great fun, and that's just one example. There's nothing like that in Horizons. Illegal stuff isn't that fun :)

Anyway, I'm having fun with Odyssey so far. New stuff is new stuff, even if it's not everything I wanted. :)

Killing dozens of scavengers guarding a bit of space junk or when I'm turning powers back on in a settlement is not the best scale of combat, but it's the exactly how it goes between the player vs NPC ships in space too, so it's consistent at least.

Yes, you can. Restore missions, item collections, scavenger mopup, wreck recovery are all legal, will give you their own loots, plus the mission reward. However, a few non-mission-reward items with rare drops, such as Opinion Polls (40 required to unlock an engie...) will take you years to find that way. The nice thing is that we can give each other all those items, including data, so you should be able to gather these anomalies through the community instead of rampaging around.
How do we give others data? Uploading to random data ports?

You need to met in person on the ground, and from the backpack menu, you can drop items. Not justs assets and goods either, the data items can also be dropped (they pop out as some kind of small container). Note that multiple copies of an item will be dropped as a single lootable thingie, so you want to avoid dropping more at a time than your friend's backpack capacity. If they have 10 data spaces in their backpack and you drop a block of 20 cat media for example, when they collect it, they'll only get 10, and the extra 10 will have vanished.

I don't mind being a mercenary. I can live with the odd assassination.

But I have to admit I'm choking a bit on the idea of going round murdering innocent civilians on holiday for the off chance of picking up an Opinion Poll.

I wouldn't have pulled out my gun if they had answered the danm question!

Then don't do it? They're a chance of a drop at any HAB dataport. You can scan those without murder. Every time I do a fetch mission for some engineering thing I want I walk straight to the HAB. Not only can I steal their cat media I can also then use the terminal to find the thing I'm looking for. There are only a few settlements were the HAB isn't Auth Level 0.
