I have been playing E;D for a little while now, I have a Saitek x 56 (Logitech G56) I want to add more to my setup, I was wondering before I spend 1000’s of usd on equipment that I can’t use if anyone knows what controllers I can use with elite

practically any thing that has a usb lead can be used to control this game it will probably need to be rebound in bindings to do so
and even somethings that don't like voice control via voice attack and HCS pack

Anything works, ED doesn't support more than 32 buttons though.
As long as the controller uses standard Directx codes or can be programmed to send keyboard codes it will work with Elite.
You will need to use a workaround if the controller sends more than the first 32 Directx button codes per controller or has more than the max no of axes allowed by Directx per controller (8 I believe).
Unless the controller is for a made for a specific game you will likely be OK (eg unless someone has written a driver for some of the Logitech MSFS panels you will probably run into issues getting them to work in ED).
If you take a look at https://edrefcard.info/ you will be able to see some of the controllers that other players have got to work with ED.

I use a Logitech X-56 grey throttle and a VKB Controllers Gladiator NXT for the Joystick. Also mouse and joystick for on-foot missions. Lots of bindings on the throttle and awesome flying precision with the NXT plus dual fire triggering that the X-56 Joystick doesn't come close to. I've also used a T.Flight 1600, Warthog and even an old Saitek Cyborg Evo and IMO this setup is perfect for EDO. Looks like you have half of it already!
How does that work then? - I keep seeing it in specs but have no idea how it would work in Elite for example.

The Gladiator NXT has two fire switches to easily setup EDO fire groups one and two. The main fire switch is also a two stage that can be setup as follows:
Press a little = fire group one. Press a lot = fire groups one and two!
That leaves the second fire switch open for other bindings. It's nice to have options...

The x52 has that. You're saying the x56 doesn't? Not that I use it because I tend to mash the button in combat.
I love the saitek x56, I’m going to have to look into this Gladiator NXT as the 56’s pinky trigger is great it’s just a bit uncomfortable after a few hours of flight
It does not, I’m as gentle on it as I can be at least untill I get another set of sticks for a spare, I don’t want to be down and out for a while, and doubt I could use an Xbox controller again

I started with a Hotas X when I was just trying out ED, then I got the TM 16000m which broke in record time and had a useless button layout, and I've had a Logitech X52 Pro for most of my flying career. Recently I replaced the stick with the new VKB Gladiator NXT Evo with a premium grip (still using the X52 throttle). Changing around my muscle memory was tricky for a few days, but it was really worth it. The Gladiator NXT Evo is really worth the price, very nicely built, comfortable and precise. In my opinion (and that's not only because I bought it ) it's a nice middle ground between the, lets be real, toyish Thrustmaster and Logitech stuff and the outragiously expensive Virpil sticks.
I found the two stage trigger on the X52 (and on the Evo) not so useful for combat. Putting them together on the same physical actuator sounds great until you want to fire firegroup 2 without firing 1. I have my second trigger stage assigned to primary fire so I have to consciously pull the trigger all the way through. I use the (very gently triggering) first stage for stuff like UI select and deploying hardpoint (with a modifier button).
I think the X56 pinkie is the same as the one on the X52. I found that one okay, but the loud "click" annoyed me. The VKB's pinkie button is not as easy to reach, I had to adjust my hand position a little, but I got used to it after a few hours. It's actually not as easy to press by accident, so I crashed much less frequent into things by accidently boosting .
I had been pondering for a while if I should get a dedicated button box but ultimately decided against it and instead went for a Streamdeck. I had the 15 button one for a while and have recently moved that one to my desk (I play in VR away from my computer desk) and upgraded to the 32 button version. Bit of a pain in the backside to set up, but a great addition and more flexible than a dedicated button box (if all you need is buttons), and in VR I don't need the visual realism for "immersion" . I control various ED functions with it (mostily fighter control, wingman / team commands, and nav panel filters) as well as having a setup for audio control and such. Most of the buttons I can do blind, but I can peek under my VR goggles if need be.
My four control devices (throttle, Streamdeck, a small wireless keyboard and the stick) are attached to a small sawhorse I can put to the side when I am not flying. I have a small side table to put the mouse, a drink and my phone on.
I also use voice attack with a few different HCS packs, but that's more for entertainment than control. I rarely use the voice control, it's more the company of Captain Kirk in the cockpit . The most useful and frequently used voice commands are having it tell me where the landing pads are (which I cannot remember for the life of me) and asking for the local time . It also tells me nice things like fuel reserves or remaining jumps when I travel.
