If there's only one bio-signal, then there's nothing to scroll through. You can only switch maps when there is more than one signal
land in one of the blue areas. On teh way down you can turn the blue map off to see the sunlit side of the planet. I switch back and forth between teh sunlit view and the blue view when searchign for a landing location. You switch views by changing between Analysis and Combat modes.So how on earth do I find it?

One must use experience and the Mark I Eyeball to search for the plant life. It becomes easier as you learn where to expect certain types of plants, terrain-wise. Anywhere in the blue areas is a spot where the plant (in this case a bacterium) can be found. Bacterium can be difficult to spot on some terrain because they are flat to the ground.
