For as many neat rodents as South America has, I think the next one has gotta be the mara. It's really grown in popularity ever since the capybara got out of the way, and it’s a super common and fun zoo species.
My dark horse choice would be the humble long-tailed chinchilla. Despite being a common exotic pet, they’re no stranger to zoos, and could work as both a space-filler in a South American section as well as a children’s zoo area. They could even be paired with axolotls to build a “pets with a conservation story to tell” area.
