You buy a low grade fighter pilot, they stick around and build up rank as they already do, but what about having the ability to sell them for a profit when they are highly ranked?

I mean sure.. if you want to sell your Elite pilot for ~3 million (that would be the appropriate scale-up if we take the price of the available ones) after having paid him about 5 million or more while he was leveling.. go ahead :D

The arbitrary 3million you mention, don't forget that's a percentage of what that pilot has earned with you!

This feature only available to Imperial pilots, since no-one else deals in slaves. :D

More seriously: football transfer fees come from clubs selling / buying not the player but the remaining term of a player's contract. It's an important distinction. On the rare occasion that a club lets a player's contract expire or they otherwise find themselves out-of-contract, they're free to go where they want with no transfer fee. 'Free agent', as American sports call it. In ED, we don't have a time-limited contract with our NPC pilots, so what are you selling, if the pilot isn't a slave?
