I don't understand why people complain about terrain generation, there are some gorgeous views around

That looks "fine" to you? I suggest firing up Horizons while you still can to have the old planet tech to compare. No weird blocky-squarey-textures-thingy. Second, third, fourth and last pictures are major yikes. First looks good and the other has the iCourier, so l like it too :)
If someone took this in Odyssey they'd be complaining it's flat, the dust looks fake, the terrain looks like it's a repeated texture, etc.

That terrain roughness is quite homogeneous, but what is bothering with Odyssey planet tech are less zoomed in terrain textures and more copy-paste of macro features, which you can see from a much higher altitude. Of course, if you take a zoomed picture of the beach sand it'll look very homogeneous but the beaches themselves are quite unique in terms of form and size. In Odyssey the planet features from high altitude are transformed, translated and pasted all over. That's fine with zoomed in ground texture, but not for planetary features.

I wish they would also make some more coockielike darker planets in texture.

I mean the darker means less sugar more realism - so that's a good thing?
At least that's on their roadmap for now.

Will we get a chance of tools to interact with the environment later?
I'm also still waiting for features like mining caramel from the volcanic sites on those candy planets, or siphoning cream from gas giants...

The textures will be fixed - Horizons' terrain was just 1000 shades of brown and grey.
