ok, question, what is the 1 piece of kit you want?

I want a left-handed joystick. Tight budget just now and wife not keen on me spending more money on this game.

Look for a used CH Flightstick Pro, and make sure it's the USB version, not the older joystick gameport one. They're selling used on Ebay in the USA now for between $20-30 USD.

I'm now using a Thrustmaster HOTAS, but I've used CH joysticks, throttles and pedals in the past for many years. The build quality on CH gear is very solid, so a used one is a safer buy than with other brands, and you can save some money. I always had more success bringing in new toys with my wife, when I tell her I bought it used, dirt cheap. ;)

I also would want many pieces but considering the usefulness of them all i would choose a head tracking device.
There are some out there but i honestly don't know which one i'll choose as of yet.

Cheers

As a fellow southpaw, I can honestly and strongly recommend that you learn to fly right-handed. You'll have to learn to use a flightstick with whichever hand you pick, so you might as well learn with the hand that allows you to use most of the best joysticks on the market: Even if it puts you at a slight disadvantage initially, you'll pick it up with time.

That said, if you want a good ambidextrous joystick, the Thrustmaster t16000m is a fantastic choice. It's got good build quality and uses Hall sensors, which are notoriously accurate and resistant to wear and tear. It's also very affordable, with a good number of buttons and a throttle to boot. There really isn't a better stick in that price range.

You can find it here if you're playing from North America, or here if you're playing from over the pond.

I'm on the fence as regards Oculus Rift, still not convinced.

So I have three options at the moment which I have been considering:

1.an ultra wide monitor and sell my AOC
2.2 more AOC monitors
3. keep what I have and get a reliable head tracker such as trackir

Seriously thinking about the ultrawide if I can get one cheap with a high refresh rate.

In your situation, assuming you won't buy the Rift, I would definitely pick TrackIR, or a cheaper alternative. It will completely change your experience, much more than just a bigger screen which will give you the same gameplay experience.
Or, get your new screen and buy EDtracker for £20 or something.

As an owner of TrackIR 5, for Elite: Dangerous, I'd honestly recommend the EDTracker. It's cheaper, doesn't require fragile reflectors or LED arrays, and also doesn't need a glorified webcam.

The additional degrees of movement afforded by the TrackIR aren't really that beneficial in this game, either; I actually have them disabled in my Elite: Dangerous profile.

However, if you have interest in other flightsims - particularly realistic ones, like IL-2 or Rise of Flight, the additional axis enabled by TrackIR become pretty useful. You can lean out of the cockpit while taxiing on a taildragger, or duck down to view instruments tucked away in awkward places, or lean forward to read the tiny text on your dials.

Until FDev finish tinkering with the gfx engine and optimizing things i wouldn't like to speculate. Before SLI worked i was steadying myself for a CPU upgrade when the next batch of intel chips come along, but now that I'm getting 60fps in most situations, i think it prudent to wait and see what the released game runs like.

I would like a quality HOTAS with a twisty stick and a throttle with an analogue thumb stick, however. None of the current offerings really tick all my boxes.

I keep trying to make myself upgrade my machine... But most of the time I'm playing the game I'm sitting at >60fps so it's hard to justify spending a £1000 for that reason. At worse in really busy stations or big battles I'll still be 35-45fps...

You don't get it... I could list at least 6 pieces of tech... I would like them SLI as well... BUT...
Saying 1 means you have to define a single item that would be above all others, NOT your "Dream Machine".. If that were the option I would have asked what kit is needed to make your "Dream Machine"

One was specific for a reason. Actually several reasons.

I think I'm allowed to say, "Dream Machine" as, to date, don't have the kit to run the game, at all .. Realising the OP says "you have your machine going, the game is installed.." but it isn't!! (Do I win £5?)

A GTX 980 would be nice but I will have to wait till they are old hat and around £150... a year away at least :(

A Nimitz-class aircraft carrier.

I could then sell it immediately for many billions and buy anything else I wanted.

A second ZOTAC GTX 980 AMP Extreme. The one I have is brilliant, but I want another before the CV1 is released. I'd get it today, but I'm forcing myself to wait until ED goes gold.

A better chair.

Using rudder pedals while sitting on a cheap rolling swivel chair is great for my abs, but not so conducive to extended sittings of Elite: Dangerous.
