What can I expect with an i7 6700HQ and a GTX 1060 6GB? It seems my CPU is the only thing that's below recommended

It seems the game will rely more on the GPU than the CPU so even if your CPU is weaker, you will be able to tweak the settings to have a smooth game with acceptable graphics.

I'm just speculating since there hasn't been official confirmation about the game resources consumption.
I'm basing my hypothesis on:

When i turn off vSync, the GPU utilization will cap out at 100% and the FPS in game for me are just shy of 200 FPS reported.

When i get the chance to, will set the nvidia control panel to have the 4k resolutions.

I have an i7 6700. I would say you are fine. Planet Coaster is CPU heavy. I suspect this game will be as well since it uses the same engine. But we will have to see on release day. It will take a while for people to get videos on performance uploaded.
 
I suppose the game will pull more CPU when there are many buildings, visitors and dinosaurs while it will pull GPU when the map is without overloading elements.

Hopefully it could be blocked at 30fps. I remember that in Batman Arkham Knight you could choose between 30, 60 and 90fps. In the case of not being possible, then the refresh rate of the monitor is reduced to 30hz and that's it.

4k not possible

So after playing just the first few seconds it's already clear to me that 4k at max settings and 60fps is not possible. I get around 30-40 fps with my GTX 1080, so even a GTX 1080TI shouldn't be able to get 60fps. When I changed the settings to the HIGH preset I got around 45 fps.
2560x1440 was running at 60fps and max. settings.
But that's all just the first minute of gameplay and from what I have seen from other people it will drop about 10 percent with dinosaurs and 20 with rain/storms.
 
Update on 4k gaming

So after playing a couple of hours and finishing the first island I can more or less confirm my earlier post: 4k at 60fps and max settings isn't possible.
However, even running it at 30fps looks great, and for a game like this 60 fps is in my opinion not necessary. With rain and wind I sometimes had drops into the low 20s, but the game still looked great and without the fps counter I probably wouldn't have noticed it at all.

So in conclusion playing the game in 4k is possible if you don't insist on max settings and 60fps; and even a GTX 1070 on high settings should be able to deliver playable 30fps.

I have several machines and displays that I've been playing/testing JPE on, and I can say that I run 4K Ultra Custom (with all settings set to highest) at 60+ fps using an overclocked i7-7820X and overclocked GTX 1080Ti along with 32gb of RAM. Personally, although the game is quite pretty, I don't quite understand why it's so graphically demanding.

On my laptop with i7-8750H and GTX 1070 Max Q I get about 90fps at 1080p with max settings. And when hooked up to my eGPU with a GTX 1080 on a 4K TV I get about 35-40 fps on max settings.

Great to here that it works better for you. I guess it's just an issue with my system then. When I start the game I also get 35-40 fps at max settings, but checking in MSI afterburner I noticed that my GPU gets pretty hot, so I guess it's the thermals that limit my performance. Too bad there is no SLI support, now my 2nd 1080 is just in the way blocking the airflow and slowing me down.

I’ve an old Phenom X6 with 16 gb ram and a 970GTX. The game runs perfectly with settings on Ultra.
The optimization is perfect! A wonderful job!
