So we are a couple of months away from the release, so they should have tons of material to show....but nothing, so far.

Why doesn't FD show more stuff of Odessey?

Too much information, kills information.
On the non-conspiracy side: I expect there are many different parts (departments - decision makers, developers, marketers etc) within the company who are dealing with this and in turn each only get a limited amount of information to work with, share and move forward on the build up to release.
On the conspiracy side (and totally the real reason): The people at the top know that a taste of 'what could be' works far better on the sales front than the cold hard facts that may disappoint some people's expectations!

because the cynic in me says there isnt much to show... so it would be like watching a trailer that is actually the film.
From my (considerable) time here, I can tell you why .... it's our fault.
Frontier have been burned too many times by telling us more than they wanted, and answering one question, raises ten more. The complaints would start before the expansion is even released. It's going to bad enough for them just with the Alpha and Beta phases. They'll be inundated with feedback, and complaints, so best to control that as much as possible, and one way to control the amount of complaints is to control the information that is released.
So yes, it IS our fault.

They don't have much to show, I guess. And the gameloop is probably rather addictive than presentable.
I came here to joke "because there isn't anything to show", but the dev diaries were fun. The AMAs though, were all pretty much "AMA but that."
Yeah - the AMA and Q&A are both 'let me tell you again the stuff you would already know if you paid attention to the dev diaries".
But the OP pretending they've said nothing. Almost as funny as the explorers complaining 'nothing about exploration' if fdev try and talk about combat for more than 2 minutes
There is not much else left to show, it's a fps shooter bolted onto Elite Dangerous. They added a scanner gun for explorers.
I'm sick of the silence, it wouldn't be better: "Due to the pandemic the dev diary 4 has been delayed" and that's it but no, they shut up ...
Because the update doesn't exist its a long con to get some sweet pre-order money and once that's done Frontier will reveal they have in fact bought out Chris Roberts SC and intend on going big in the jpeg and promises business.
they already answered that, the minimum requirements are the same for odyssey.I'm still waiting for PC minimum specs. I only have a 4GB GTX760 and would like to know if I'm ok. I'm looking to upgrade though but finding a GFX card these days is a bit of an ask.

It doesn't follow the standard English language word structure so non-english commanders wont naturally be able to spell it and (has been seen) some of those who can write english will struggle.
It'll make google searching for information a nightmare.
Apart from actual gameplay, which I assume will still be being worked on, what's left to be revealed?

Elite Horizons - you can land on planets
Elite Beyond - your commander now has a face - you can multi-crew into other ships so you can see other commanders.
Elite Odyssey - you can walk / shoot / jump / crouch* on planets (*delete as appropriate)

I am personally hoping to journey back from SagA* to kill all my wife's suitors when it comes out.
If the development is full steam they probably have better things to do than put makeup on a developer and make a tv show. Which probably means its not ready yet to show off in the first place.
