Why every patch brings more bugs than fixes?

Fixed it for you:

Player was misinformed about the state of the game -> buy the game 60$ -> player report bug in bug-tracker -> FDev eventually pushes a fix for free in a matter of weeks -> Fdev also creates new or breaks previously fixed issues -> FDev eventually pushes a fix for free in a matter of weeks -> rinse and repeat.

Unless of course it's a credit exploit, that gets fixed immediately.
Ok, we finally agree. Good one, and this is to me the beauty of any game development, nothing proper specific to Elite, really.

The feedbacks loop between FDev and the players work fine.

Player buy the game 60$ -> player report bug in bug-tracker -> FDev eventually pushes a fix for free in a matter of weeks.

The keyword here is "patience".
This is precisely the kind of attitude that enables Frontier to get away with how they manage their software. Shoot from the hip and fix stuff only once someone complains (in the form of the issue tracker). Not great.
One last time. It's called the bug tracker (top of the forums). Any intelligent developer will only look at this, they'll not waste their time reading dedicated and duplicated threads.
I don't expect developers to read these forums (in fact I'd strongly advise them to ignore them for their own sanity). CM's on the other hand. It's part of their job to monitor what's going on given this is part of their official social mehdia channels, and I would expect them to filter relevant information to the devs even if no issue tracker ticket exists. And it seems more recently this is already happening thanks to Sally.

We did, and the results weren't very... stellar.

Imho of course.
FDev don't seem to be particularly aware of what's going on within their very own game so yeah, not sure how things would pan out if we just left them to it. Even from an artistic viewpoint - I remember they initially didn't suggest that they felt there was anything wrong with the look of the game (lighting, gamma, brightness, oh and my personal favourite, paintjobs etc.).

Is it?

I'm not sure any end user has the information to qualify that statement. Hell, I'm not even sure FDev does.
Well, I can play for a start, which was not the case back in Jan. 2015, due to constant disconnects, fundamental features not working (wake dropping...), instancing being unusable etc..
My experience of EDO is mostly painless right now. I wish they would fix head tracking, and I'll have to take into account the fact right now attacks on your ship don't register as hostile actions, but on the whole I feel much better about the game now than I did before Odyssey.

I dont understand that. Really after every patch come swarm of bugs. Devs dont test it? Or what is wrong? I see no fixes. Perfomance is still horrible. Even after last update textures are worse. Dont work or new adds when the game is still broken. Fix it firts, then you can work on additional content.
I hate to tell you this but game development is hard. There's a reason that Elite Dangerous, NMS and SC take so long to develop / change. These are very complex systems they're pulling together and sometimes you make a change at one point, then it can have unintended consequences further down the line. The problem with these complex systems is that doing a full regression test is now such huge task that I suspect they're not doing a complete job to get the release out. Who would have guess that putting a new Battle Buggy out would thrown out the plant scanning!

I will take issue with one of the things you said. I would say performance has improved from unplayable on "release" (12 fps) to acceptable with update 8 (38-40 fps) on a 1050 ti. The updated art on the planets has improved the repeating terrain issue not made it worse. I have seen the repeated terrain issue (prime example was in Leesti). However, I'm still enjoying my trip to colonia, stopping at every planet with more than 2 biologicals, and out of all the planets I've seen, I haven't seen any repeated terrain patterns and there's been only one issue with terrain on desert like planets.

I still maintain that Update 8 is where the basic release should have been but you can't deny that things have improved since launch.

Yes, that's exactly my point. We shouldn't be used to it.

Its been 7 years. A bit hard to keep giving a damn about these things. As I said, if youre going get worked up about it, you're going to get worked up about it year on year. If FD were going to change, they would have done it years ago.

Doesn't matter whether we "shouldn't" be used to it, its not changed in 7 years of people complaining about it. I'm old, i only can give a damn about these things for so long.

I understand. But anyone who is still trying to change something should not be actively discouraged.
Who knows, maybe one day it will make a difference.
