In no particular order:

1) North American River Otter
2) Jaguar
3) Cougar/Mountain Lion
4) Red Fox OR Fennec Fox (really any type of Fox would be awesome, but I prefer one of these two at least)
5) Capuchin Monkey (but really I’d love any kind of monkey)
 
Habitat Animals:
  1. Giant Anteater
  2. Red Kangaroo
  3. Brown-Throated Sloth
  4. Platypus
  5. Moose
Exhibit Animals:
  1. Red-Eyed Tree Frog
  2. Frilled-Necked Lizard
  3. Gooty Sapphire Tarantula
  4. Atlas Moth
  5. Jackson's Chameleon
 
1: Maned wolf (I love Canids and being one of the most unique canids in the world, the maned wolf is top of my list after the african painted dog (But that's already in the game.))
2:Jaguar: I was highly dissapointed that a zoo game would launch without such an iconic and endangered animal, especially since it even has decorations pertaining to it already in the game.
3: Fennec fox
4:Iberian Lynx:
5:Any leopard species: Yet another dissapointing omission from the game, especially with the other three main big cat species present.

Honorable mentions for dissapointing omissions that need fixing are: Scimitar horned Oryx and Most Rhino species, both staples ofzoos and Safari parks that are for some reason missing entirely from the game.

Okay, it is haaard but I will try to tell my top 5 :
1 : Fox (black fox would be amaziiing, but I would be crazy about any fox)
2 : Otter (the small asian one, but once again any kind would be great, if they have nice swimming animations)
3 : Canadian lynx (the Iberian one would be really good too)
4 : Meerkats (like, we have the Lion King, Pumbaa, where is Timon ??)
5 : Penguins (any kind would do, they just lack so much to the arctic pack !)

I would also love, as others suggested california sea lion, beaver, prewalski's wild horse, and red river hog (they would have been my number 6, they are sooo funny and unbelievable to see) !
 
Very thrilled that the Giant Anteater and the Jaguar no longer have to be part of my list. Nonetheless, the top 5 at the moment would be:

1. Maned Wolf - a Brazilian icon (and personally, an animal I adore), I was hopeful it could find itself in the South American DLC and am saddened by the fact that I don't think I'll see it any time soon. Still, a guy can't help but dream.

2. Red Kangaroo - I think this is on most everybody's list. Self-explanatory, I guess.

3. Southern Cassowary - I know everyone is saying emu. And, deep down, I know emu makes more sense. Still, I find the Southern Cassowary so much more interesting and a part of me will continue to hope it makes itself onto a soon-to-be revealed Australian pack.

4. Serval/Ocelot/Caracal/insert smaller cat species here - I understand the desire for putting big cats in the game: they're awesome and they're impressive. And trust me, I'd love to have an African Leopard in-game just as much as the next guy. Nonetheless, I feel like there's a whole roster of smaller cats that are just as interesting and that, presently, constitute a missing niche within the current species we can acquire. Would love to see one of these guys soon.

5. North American Beaver - I was rather surprised when it wasn't found in the original roster, as a player of the original Zoo Tycoon 2, I wanted to have the opportunity to build these critters an exhibit. I do believe, however, that it won't take long for this one to come out - hopefully with dam-building animations embedded.
