Could make a sailing game with logistics and adventure for each expedition. 1472 was portugese explorers still discovering the coast of Africa.

Well, maybe there are still a number pretending SC will be a solo experience. Maybe they still believe in a pvp slider? I guess you could sell anything to those people if you wrap it up nicely.But a lot of people play games like ED, SC, and even EvE solo. They just want a game they can play that suits their needs.
So while you are right, it won't attract many who are focused on multiplayer, it will be attractive to those who are fine with a solo experience.
However, just because someone mainly wants a multiplayer experience, doesn't mean they won't also be interested in playing Starfield as well, while they wait for SC to become more playable or have more content, or just for a break.
Problem here is, SC is 100% dependent on those ship sales. Its probably safe to assume (assuming the funding tracker is at least somewhat approximate) that for a good while, most months, CIG is making more money than they spend.
But let's say a lot of people get fed up with waiting for SC, mainly those who prefer solo experience and some who prefer multiplayer. They aren't all necessarily going to give up on SC, but some might enjoy Starfield a lot, put a lot of hours in it, and kind of lose interest in JPGs sales. They have enough ships anyway. Perhaps people who are eying up SC think, well, SC isn't released yet, ill spend my $ on Starfield now and maybe get SC later.
Depending on how much CIG spends each month and how much of a dip in funding Starfield causes (if any!), it could send CIG into the red.
Still, that might be the kick in the rear end CIG needs to start focusing on trying to make a releasable product instead of infinitely kicking the can down the road.

I think it is as much a "competitor" of SC as some of those other games you mentioned. And especially a competitor (eventually) of SQ42. I would venture to guess that, despite how you play/want things, the vast majority of players in SC end up playing solo during a large chunk of their experience in game, much like in ED or NMS.I see Starfield as competition for ED or NMS, not really SC or EVE. I suspect Ci~G are hoping for almost the opposite. From a marketing perspective, Starfield may possibly draw an influx of new players into the space genre that perhaps wouldn't have been interested otherwise, I reckon Ci~G will be hoping for some bleed-off of new victims sucked in initially by the popularity of Starfield...kind of like the cross pollination between Eve, SC and ED some years ago. Eve and ED had some players dabbling in the early SC and vice-versaMy point is, its not so much a direct competitor in the way its usually meant.
More just people playing SC, apart from the most hardcore, will be happy to play a new space game or even just a good working game, and decide to play that for a while, and if they really enjoy it, maybe they will lose interest in SC for a while, causing a hit in JPG sales.
It all depends on what you want from a game like SC (or ED, or NMS).
If you are tired of waiting for NPC crew and base building to come in SC, you might decide to get that particular fix from Starfield (or X4 even). Why wait to experience a feature that may or may never come, when there are games out there that offer that feature?
We could even go as far to say that every new game that comes out that has a feature or gameplay that mirrors something in SC or is promised to come for SC in the future has the potential to draw some players away.
Want pew-pew against other players in a persistent online world? Sure, there are other games that allow that, some in space, some not in space, but hey, they exist, are playable, and not a bugfest. Why wait for SC when you can get a better experience doing what you want to do right now?
The numbers won't likely be huge for each new game that releases that has similar features, but as the years drag on, more and more will drift away, and CIG becomes more and more dependent on getting fresh blood in to provide new funding.
Probably why CIG has been courting far eastern countries recently.
