I've read many of the design archives, and I just don't see any other game mechanics there other than grinding your way by doing NPC missions to gain Elite rank in solo, by fighting, trading, mining and mapping.

Well... if that's all you see in this. (which is a lot when there's 200 billion stars)
What difference does it make? EVE has 2499 systems and people are playing it for years. It's the game mechanics that matter, not the amount of star systems. That being said, I still think that it is cool that Elite has 200 billion stars.
There are a lot of games out there, I intend to play many of them. This one, however, I wouldn't go into with a grinder mentality. It would defeat the entire purpose.

All that you are describing means nothing. Please give me practical examples. What is there to do in the game besides grinding your way from your starting ship to the ship you wanted by trading goods from A to B or fighting?

Since you like EVE so much, (and I do too,) what do you tell a noob after they get their starter ship and completed tutorials when they ask "OK, what do I do now? What's the point of this game?"
It happens all the time on the help channel doesn't it? You know the answer. "Whatever you want to do."
The mechanics are different, but the idea is the same.
