I genuinely think online players in open is so scarce and the time you spend in SC is so low that you are almost completely safe in open. Unless you visit some high traffic systems like Shindez or Deciat.

Au contraire mon ami. Other than in EvEOnline, ED-Spaceships are not a fulltime job to engineer. You can get all materials and unlock the engineers quite fast. Speaking of my own experience as a working-class member who's out the home for 13h / day and have my fully engineered murderhobo FDL. I purchased it, unlocked Lori Jameson and engineered it within hours. To actually attempt to answer the OP, there is no easy solution. The game is what it is now. But I can say imho why its gone this far: engineering. When FDev decided to include high level weapons and shield engineering in the game, those who could grind grind grind to get god-like combat ships are not pitted against casual and new players who have a RL and responsibilities that keep them from doing the grind for engineers, mats and turning their ships into pvp killing machines.
I needed a refresher so I looked up:
griefer: (in an online game or community) a person who harasses or deliberately provokes other players or members in order to spoil their enjoyment.
ganker: someone that preys on "easy" targets, most of the time the ganker is of a higher level or having superior gear available to him/her. (<< engineering)
The team that killed me Saturday should be labelled "griefer-gankers" because both definitions apply. I was in my modestly engineered Krait2 (not intended for PVP but adequate against NPCs); they were in apparently highly engineered condas since I was being pounded for the first time ever with corrosives.
With that said, I have to say I've only been killed twice by humans and I've been playing since early access. However, for years I did not play this game for combat; I bought it because of everything else besides combat. I have other games for combat. I like astronomy and is the main reason I went down the ED path instead of StarC. enough GL HF

Yesterday I exit Jameson memorial in a krait mk II fitted for exploration, not in open for a year, the moment I go through the slot a volley of plasma hit my ship and destroy my paperthin Shields and half my hull. Another volley and the ship is gone, only a phrase in the chat: if you're not kumo crew you're nothing. I understand the sour taste, but take it as a learning experience. Prepare better or do it in solo or PG. A question about how system security works: how fast do they react and how deadly are they? Say I went in there in a really shielded ship, would one or several gankers get kersploded before I do?

That is what engineering changed.Even with engineers you have a decent Chance to get away a gank. Just look up Rinzler's "Git Gud Trading in Open".
