It is just all very amusing to me...if the poor bloke actually did buy the game just to mine, I do feel sorry for him...but I suspect he didn't. It smacks of "Newb cracked that egg for credits but now doesn't know what to do with the omelette."
Even that question..."what did people do before mining?" What's the bit you left out? (For credits) is the answer. What did people do (for credits) before mining? When the game first came out, it didn't even have limpets. You had to manually scoop every fragment. Mining in 1.0 was remarkably frustrating and tedious work and you worked and flew for every credit. Now you can wing mine and strip an entire asteroid belt in a week and buy a few Cutters and a Carrier to boot. Or shoot the same stupid rock and eggsploit your way to Carrier.
It was broken and needed fixing. It's unfortunate that you came in mid-story arc, though. New guys don't have a context and I do see how this could take them aback.

Only major issue with increasing other professions to match mining would be they'd also need to revisit the prices of ships and modules... assuming they want to maintain a type of ship progression, I suppose.I'm a major advocate of revisiting and balancing the rest of the activities in Elite to be up to par/as rewarding as mining. So your issue with Smuggling, I can completely agree with. Why mining as a profession seems to jump the queue is a question for FDev. I've gathered from lots of reading that the jobs in game have had a disproportionate balance since the game's inception. Why FDev has been reluctant to comment on why that is and if it is intended, I've no clue. If mining keeps getting tweaks with no adjustments elsewhere, that's an issue with the developers, not miners.

Probably. Which in turn still means that the developers needs to adjust the rewards from other activities. I see mining as a newer system that's getting the adjustments needed as part of the more refreshed part of the game. A lot of "Mining is broken" is actually just "I can't get LTDs or Tritium", which is a whole other issue. Problem being, fixing that will just make mining OP again. Building mechanics on top of other unbalanced mechanics always leads to this.

It would create a credit inflation ripple effect, but would put ships, modules, and non-mining professions in line with mining (once fixed) and current fleet carrier costs.I can get behind this idea.
