It doesn't have anything to do with difficulty level... the problem is the npc pirates asking for cargo and then attacking anyway, no matter what. It's impossible to pacify an NPC pirate by dropping cargo.
Is nobody reading his question? Pirates ask for X# of cargo, OP gives X# of cargo, OP is killed by pirate anyway. Sounds like a bug, so the best (and only) option is to report it.
Also, this guide will be overkill to use vs NPCs, but I send it to all of my friends after their first... incident.
I'm pretty sure it's just new players demanding change as per usual. I remember when I did that lol
As per some previous posts - does anyone remember NPC pirates actually leaving you alone after dropping cargo, prior to about 2 years ago? Certainly, those Cmdrs with expired bug reports in the Issue Tracker seemed to think so.
If so, the OP’s issue is a bug.

I know it's off topic, but I never understood why are shields so repulsive to some. Such a simple solution to variety of problems, with little to no downsides.
Did that ever work? I thought that was just atmospheric fluff anyway. They never seemed to care for loot with me. They demanded stuff. Then opened fire. If you can't deal with them just jump out.
I've had a few interdictions over the past few months where the pirate would start shooting immediately, but had announced that intention (and obviously never survived) in the beginning.
I'm also tempted to think it is a bug, if the account given us is not missing any minor detail (which I assume positively rather than otherwise).
But, I will question the build - has it been put together with maximum cargo carrying and no regard to defense? Has thrusters been D-Rated for weight / Cost / Power draw?
A friend of mine lost a Cutter full of Void Opals (well, around 400) to a rotating asteroid back in the days, he had skipped shields and armour for cargo space...

Pirate would ask for X credits worth of goods, you'd have dozen seconds or so to comply.
Moving away from the interdiction drop off point, or engaging FSD, would aggro the pirate.

Yes, but we did not have the disadvantage of hauling LTD's by the shipload, or the credits to do that eitherFor those of us who have been paying for 'a while', remembering when we last handed over any cargo (if ever) to a pirate is likely to be at, or very near, the start of the game - which is exactly where the OP appears to be.
