Does it come with or without gravy?
the question is more ....

Across the board the best food I've had, in terms of quality and consistency has been in Italy. I can happily say that I have never had a meal in Italy that wasn't at least good.

France (well Paris) on the other hand averaged out at 'poor', with the service '[redacted]'.

Oh rubbish!! You're just misunderstanding Parisian culture.... I believe that being rude, offhand, condescending and at times bordering on offensively dismissive is a mark of respect in Paris.... 😏
Parisian are not well liked in France either. Without generalizing, but a lot of them are rude and condescending. And they are downright very rude when someone doesn't speak french.

As a tourist, you should avoid Paris, Marseille and Catalonia. I heard people have bad experience in Corsica to but I can't confirm myself.

Paris and Marseille tend to be rude and condescending. Catalonian might not, but they hide a knife behind their back. They tend to be very isolationist, and having lived there, they increase their price and decrease the quality for tourists, while doing the opposite for the locals. And by local I mean Catalan. You need to be born here, moving there will get you lots of petty stuff until you die or move. Not kidding.

Rural area are very nice, but people need some time to warm up to you, and most will not speak English. I lived in the south of Toulouse, and the entire area is very nice, with friendly people. Also, Toulouse is a very pretty city (the Pink City), and south of it you have the pyrenean and the Cathar castle. Lots of history and nice landscape. And food is very good (cassoulet, anybody ?). Highly recommend.

I moved a dozen time before becoming an adult, Catalonia was the worst place for people, Ariège/Toulouse was the best.

It's kinda sad Paris is the number one touristic destination for our country. Most people think the rest of the French people are the same, but it's not true. There is a lot of deep seated enmity between the capital and the rest of the country. It's also an historical thing.

it's even worse for me, because people assume due to my name, that I can speak french and just don't do it - having a french name and not speaking french is strange.

This said, I was on vacation several times in the Bordeaux region - mainly cote d'argent - and people where really welcoming and nice.
