I just finished engineering my new Python, the Darksaber, and I'm enjoying this as a VR ship. The bridge definitely gives me that, "I'm flying a proper spaceship" feel, in contrast to "I am the spaceship" in 2D and the "I'm flying a giant greenhouse / fishbowl" like the Vulture in VR. Speaking of, I had to sell my beloved Vulture to afford it, along with some other ships, and I still only have enough credits for one rebuy. I'm actually okay with this, as it gives the ship more intrinsic value if losing it actually hurts.
I have three ships that I just can't part with right now - my stealth Dolphin (which will be even more stealthy after the next update), my Type-7 (love that ship), and my Eagle (the most fun ship to fly in VR). I also have two ships in mothballs until we get space legs - my Federal Corvette and Type-9. I got both of these for a super price during the recent interstellar initiative, so I really can't sell them, unless I'm desperate for liquid credits. Neither are properly outfitted to use day-to-day, so there is no temptation there anyway. I consider them an "inheritance" I'll get someday in the future.
Obviously this doesn't make me a true one-ship captain, but Han Solo flew an Imperial Shuttle for a mission (and a Tauntaun and who knows what else) , so it's not like I can't have access to a couple other ships for special occasions. I figure if I perform the majority of my activities using one ship, it's still like being a one-ship CMDR, as some of you have pointed out.
