ED in VR is indeed mind blowing.Adding +1 to this suggestion.

I agree, at the time it was one of the first games to have VR support and I didn't expect it to be relegated to the sidelines, particularly as I like others play exclusively in VR. I feel it helped promote the game too, and I'm hoping that wasn't the only reason they focused emphasis on the VR support early on.I found a youtube video with David Braben showing off at a convention (back in 2014) about ED and implementing VR .. when you look at it with today's reality in mind, it's so frustrating and sad .. there was passion about new tech back then, now there's only silence left about the VR "experience" they bragged about at the time. Completely ommitting that they have an omportant playerbase playing only in VR.
I'm glad and thankfull that at least the community are still fighting to get what the game was supposed to have intrincically: VR support, and not a poor alternative: cinema-screen projection.

What irks me is that Odyssey was clearly never intended to have VR support once development began. I don't buy their "we tried and couldn't make it work" comments when the news broke about no VR support for on-foot, particularly as the floating screen isn't even rendered in 3D, which suggests their rendering pipeline hasn't been written with any sort of 3D, which is ironic considering David Braben talks about that mode too in that YT video.

I am not sure if it can be "removed" as much as that VR 3D would need to be added in it's place.
On the positive side it’s worth noting that the stereo render does actually work on foot though. Most notably in the vanity camera as you mention. (And as an intriguing bonus, seemingly in other modes too, going by the dropship glitch)

I’d also note that vanity camera VR functionality was a specific request of this thread, and is possibly in game now as a result. The best olive branch FDev are able to offer currently, essentially.
And it's a damn shame we are even having this conversation when Fdev could implement headlook in a day. Frustrating as hellPossibly. As the OP says, it’s an assumption
