Yeah, it's just insane the amount of triggered gizmos in that. Quite a work of art.
I guess my challenge is getting the water over the hump between high and low levels, without it looking to much like it's going uphill.

Yeah, that's the challenge. PC isn't really suited to making overflow dams. The only method I've come up with that looks halfway good is to cover the intervening strip of high ground with boulders and water jets, the boulders providing a logical reason for the water jets to be splashing higher than the upper water level.
But this only works for relatively narrow streams. It's an illusion that fails the bigger you make it. So for wider dams, the best I've been able to come up with is putting spillway pipes up high, so the water seems to go through the dam just below the crest.
