When you die in game any Cartography data you sold to the Cartographer will automatically be restored to your global game save so it will be instantly accessible when your are reborn. No need to recover it, the game automatically does it for you. The only Cartography that is lost is the data that you did not sell to the Cartographer. Hope this helps.
